Hood Runs, Steam Still Hangs

Short answer

A Wolf hood that roars on high while steam still sits over the range is more often starved of a clear path than short of motor. Wolf ties hood performance to the duct behind it: its size, its material and its length. The hood is only the inlet

From the kitchen it looks like a tired hood: loud at the top of its range, while the steam off a pasta pot drifts sideways onto the upper cabinets. But whatever the baffles pull in must travel the duct and push out past the cap, so the hood moves only what that path allows. Wolf wants rigid metal duct, nothing flexible, and elbows and transitions spaced apart rather than stacked, with at least 15 inches of straight run between them where the layout permits.

Air in, air out

A blower can remove only what the house lets back in. In a tightly built newer home, such as many in the Highlands, the kitchen may have no easy route for replacement air, so the blower keeps its noise and loses its pull. Wolf says make-up air may be required and leaves its design to an HVAC professional; the window test below is a rough first reading.

The order we check it in

Baffles and damper come first, because both are ours to put right. Then the blower is read against the hood: Wolf ships hoods without one, and it is selected separately for the cooking surface and the length of the run. If the duct or the height is the limit, we say so rather than sell a blower that cannot help.

Before you book

Take the baffle filters down and wash them; Wolf's Pro hood filters are dishwasher safe, and Wolf says not to run the hood without them.

Next time a big pot goes on, switch the blower to high before the water boils hard, not once the steam is spreading, and watch where it goes.

Repeat with a nearby window opened a hand's width. If the steam suddenly lifts into the hood, the house is struggling to replace the air the blower removes.

Questions

Our hood recirculates instead of venting outside. Is hanging steam a fault?

Probably not. Wolf's ventilation guide says a recirculating unit passes air through a charcoal filter and back into the kitchen without removing heat, moisture or combustion gases.
