Oven Shuts Itself Off Mid-Roast

Short answer

An oven that stops part-way through a roast is either obeying a setting or protecting itself. A programmed stop time, timed from a clock a power cut can leave wrong, and the 12-hour auto-off on a dual-fuel range both look like faults and are not. Stops the oven meant to make

Wolf ovens switch off on purpose more often than owners expect. A dual-fuel range ends any cook after 12 hours of continuous use, Dehydrate and Sabbath excepted. Timed Cook and Delayed Start stop at the time you chose. The kitchen timer, by contrast, never touches the oven; Wolf keeps it separate from cook and stop times. Gourmet goes the other way and carries on past its cook time.

Stops that protect the oven

The cooling fan, Wolf says, runs during cooking to keep parts from overheating. If it has failed, or the air it moves has nowhere to go because the vents are boxed in, heat builds up where it should not, and that is one of the first things we look at when a long, hot roast stops early. On a GR gas range there is a second route: if the burner loses its flame, the oven locks out and the indicator flashes, and Wolf warns that switching on the convection fan during preheat can shut the oven down.

Before you book

See whether Timed Cook or Delayed Start was set. Both switch the oven off at their stop time, and Wolf says they need the clock set correctly, which a power cut undoes.

On a gas range with a flashing indicator light, turn the knob off and back on. Wolf says the oven lost its flame and locked out; keep the convection fan off until preheat ends.

On a Wolf gas range, check that nothing blocks the cool-air intake above the door or the exhaust vent below it, such as a towel hung on the handle. Wolf wants both clear at all times.

No. A Wolf dual-fuel range is built to end a cook once the oven has run 12 hours without a break, unless it is in Dehydrate or Sabbath.
